Build

- Dry Ginor London Dry Gin
- Egg Whiteor Aquafaba (2 tablespoons) · For dry shake
- Green ChartreuseSet on fire as final touch · garnish
You’ll need: Cocktail shaker, Hawthorne strainer, Bar spoon, Long match or lighter
Method — Dry shake, then wet shake
- Add lemon juice, simple syrup, absinthe, gin, and egg white to a cocktail shaker without ice
- Dry shake vigorously for about 15 seconds to emulsify the egg white
- Add ice to the shaker and shake again until well-chilled
- Strain into a goblet or sour glass, creating a foamy head
- Carefully pour Green Chartreuse over the back of a spoon to float on top of the drink
- Using a long match or lighter, carefully ignite the Chartreuse
- Serve immediately while the Chartreuse is still flaming
The story
A contemporary creation inspired by classic sours with a dramatic presentation element. Named after the Roman god of the sea, the flaming Chartreuse represents Neptune's fiery temper above the frothy 'sea'.
Variations
Some variations include a dash of orange bitters or a barspoon of St-Germain elderflower liqueur.
Host tips
CAUTION: Exercise extreme care when lighting the Chartreuse. The flame should be extinguished or allowed to burn out before drinking. Make sure the glass is heat-resistant. Practice the technique before serving to guests.
