  • 1.5 ozDry Ginor London Dry Gin
  • 1 pieceEgg Whiteor Aquafaba (2 tablespoons) · For dry shake
  • 0.25 ozGreen ChartreuseSet on fire as final touch · garnish

You’ll need: Cocktail shaker, Hawthorne strainer, Bar spoon, Long match or lighter

Method — Dry shake, then wet shake

  1. 1Add lemon juice, simple syrup, absinthe, gin, and egg white to a cocktail shaker without ice
  2. 2Dry shake vigorously for about 15 seconds to emulsify the egg white
  3. 3Add ice to the shaker and shake again until well-chilled
  4. 4Strain into a goblet or sour glass, creating a foamy head
  5. 5Carefully pour Green Chartreuse over the back of a spoon to float on top of the drink
  6. 6Using a long match or lighter, carefully ignite the Chartreuse
  7. 7Serve immediately while the Chartreuse is still flaming

The story

A contemporary creation inspired by classic sours with a dramatic presentation element. Named after the Roman god of the sea, the flaming Chartreuse represents Neptune's fiery temper above the frothy 'sea'.

Variations

Some variations include a dash of orange bitters or a barspoon of St-Germain elderflower liqueur.

Host tips

CAUTION: Exercise extreme care when lighting the Chartreuse. The flame should be extinguished or allowed to burn out before drinking. Make sure the glass is heat-resistant. Practice the technique before serving to guests.
