You’ll need: Mixing glass, Bar spoon, Strainer

Method — Stirred, or built in glass

  1. 1Add gin, Lillet Blanc, and Suze to a mixing glass filled with ice
  2. 2Stir for about 30 seconds until well-chilled
  3. 3Strain into a lowball glass with a large clear ice cube
  4. 4Express lemon peel oils over the surface of the drink
  5. 5Garnish with the lemon peel

The story

Created in 2001 by British bartender Wayne Collins for Plymouth Gin. The cocktail is a variation of the classic Negroni that uses pale ingredients instead of the traditional red ones, substituting Lillet Blanc for sweet vermouth and Suze (a gentian-based aperitif) for Campari.

Variations

Some versions use different ratios, often equal parts (1:1:1) of all ingredients. Other variations might substitute Cocchi Americano for Lillet Blanc or use different gentian liqueurs like Salers or Aveze instead of Suze.

Host tips

Suze has a distinctive earthy, bitter flavor from gentian root that may be new to many palates. The cocktail is an excellent aperitif to stimulate the appetite before a meal. It can also be built directly in the glass for a more casual preparation.
