The story
Popularized by master bartender Dale DeGroff, this drink is a Caribbean-inspired variation of the classic highball. The name 'Añejo' refers to the aged rum used in the recipe, which adds depth and complexity.
Variations
Some versions use a split base of dark rum and aged tequila. A spicier version can be made by muddling fresh ginger in the glass before adding other ingredients.
Host tips
The quality of the ginger beer makes a big difference - look for one with real ginger and a good spicy kick. A Mexican or Caribbean dark rum adds authentic flavor.
