  • 1 ozAmaro Noninoor Montenegro / Ramazzotti

  • 1 ozLemon JuiceFreshly squeezed

You’ll need: Cocktail shaker, Hawthorne strainer

Method — Shaken

  1. 1Add all ingredients to a cocktail shaker filled with ice
  2. 2Shake vigorously until well-chilled (about 12 seconds)
  3. 3Strain into a chilled Nick & Nora glass

The story

Created in 2007 by Sam Ross at Milk & Honey in New York. Named after the M.I.A. song 'Paper Planes' which was popular at the time. The recipe follows the equal parts template inspired by the Last Word cocktail.

Variations

Some bartenders garnish with a small paper plane. Variations include substituting other amari or using rye instead of bourbon.

Host tips

Using Amaro Nonino is key to the authentic flavor, though other amari can work in a pinch. The drink should be served very cold.
